The present study explains a comparison how the increase of Calcium Oxide (Cal) in the productive process of Sugar affects the years 2015 and 2016 in an agroindustrial company of Northern Peru. From this objective we used the design is not transverse, but descriptive, the study technique has a qualitative approach, the instruments to be used in this research study are the data records of the quality control area of an agroindustrial company from the north of Peru in the years 2015 and 2016, and finally as tools, Control charts and tables were used. The data from the Quality Control area of an agroindustrial company in northern Peru was considered representative sample, consisting of a total of 216 data used as a sample corresponding to the two years of study (2015 and 2016). The results of this study have determined that the high amount of calcium oxide (Cal) used and its low quality below 65% concentration of this input in the production process of sugar during the years 2015 and 2016 caused that Increase the percentage (%) of Reducers between the stages of Crude Syrup and Clarified Juice, the lost times are increased by plant stops by incrustations in the evaporation stage of the sugar production processes, and how much is left to be perceived by the times lost as well as, the percentage efficiency lost (%) Recovered from for the year 2015 compared to the year 2016. So we can conclude that a high amount of Calcium Oxide CaO and its low quality in the production process of sugar has a significant impact on the efficiencies of the production process causing economic losses.
