Abstract: Actualmente, el servicio de food trucks se encuentra en crecimiento debido al cambio de hábitos de consumo de comida rápida de clientes. El propósito de la investigación es comprobar la lógica de utilización de la logística urbana para mejorar la optimización de abastecimiento de food trucks. La presente investigación propone realizar un caso de estudio en donde se plantea métodos de optimación de ruta, ubicación céntrica y la estimación del impacto ambiental a través de la emisión de gases contaminantes al momento de realizarse el abastecimiento de food trucks; se utilizó el software RStudio y COPERT V para la obtención de resultados cuantitativo. Con respecto a los resultados, se obtuvo que el food truck es viable debido al número de clientes potenciales dentro de la zona del caso de estudio. Se encontró la ubicación céntrica (longitud, latitud) del food truck dentro de la zona donde se encuentran sus clientes; además, gracias a la ruta óptima de abastecimiento se pudo calcular las emisiones de gases contaminantes: CO2, PM2.5, PM10, NOX, VOC.
