The objective of this project is to evaluate the market, technological, economic, financial and social viability of the installation of a plant producing protein cookies based on cricket flour. The proposed product is an innovative option in the Peruvian market, healthy and environmentally friendly, because it is not yet sold in Peru, it has a high protein content, and its production process is sustainable. The proposed presentation for the marketing of the product is 9,60 kg boxes, which contain 40 six packs of cookies. Due to the characteristics and price of the product, the target market is made up of people over 5 years old, who belong to socioeconomic levels A and B and zones 6 and 7 of Metropolitan Lima, who, according to the survey carried out on a sample of 430 people showed a purchase intention of 92,09 % and a purchase intensity of 75,96 %. Taking the above into account, a demand of 19 722 boxes of ChocoCricket was calculated for the first year of the project. According to the plant location analysis, it was established that the ideal place for the installation of the plant is in the district of Lurín, since an industrial warehouse will be rented within an industrial park that has basic services, proximity to the market and high safety index. Furthermore, considering the areas required for production, warehouses, administrative area, personnel services and others, the total area required is 1113,75 m2. Respect to the economic and financial analysis, the project was viable and profitable, since, investing a total of S/ 1 108 652,31, an economic NPV of S/ 1 517 466,84 and an economic IRR of 45,35 % are obtained. Furthermore, with financing of 60 % of the total investment, a financial NPV of S/ 1 564 942,81 and a financial IRR of 73 % are achieved, both IRRs are higher than the COK, which is 14,50 %. Finally, in relation to social viability, the project generates a total added value of S/ 23 286 283 and 33 jobs.
