The food industrial sector has grown constantly in the last 3 years, even in the first quarter of this year there was an interannual increase of 12.5 %. However, it has been identified that maintaining high stocks negatively impacts the financial results of companies; since it entails investing in storage, logistics costs, among others. Therefore, in this professional project an inventory control strategy model is proposed to optimize the stock levels of maintenance items; This classification is even more relevant when it refers to industries that begin their process with live species where having the machinery in optimal conditions is vital to maintain the cold chain before and after processing. To verify the proposal, a partial implementation has been carried out and is complemented with a prototype based on the new guidelines obtained in order to validate the changes between As Is & To Be in the company under study. Consequently, significant improvements were obtained particularly in the replacement of items for scheduled and routine maintenance, reducing the maximum parameters by 58.81 % and minimum parameters by 66.19 %, by differentiating the replacement in ROP or Max-Min and re-categorization. . From this, the inventory value is reduced by 53.81 %, which results in an improvement in inventory control.
