The ketogenic diet or keto diet, initially used as a treatment for epilepsy in children, has gained popularity in recent years due to its numerous health benefits such as weight loss, control of type 2 diabetes, prevention of Alzheimer's neurodegeneration, reduction of inflammation in the body, improvement of cognitive development and performance of athletes and even improvements against cancer. This type of diet is characterized by being low in carbohydrates and high in saturated fats. As these characteristics are very restricted, the food industry is challenged to offer diverse options to meet its demand in the face of a global keto market. Therefore, this research aims to analyze the contribution of the food industry in response to the demand for the ketogenic diet. This was done under a thorough literature review of various academic journals, scientific articles, theses and books. Likewise, an integrative approach was used, where relevant data was collected from literature that is scattered in various disciplines such as medicine and nutrition and mostly in English language, since they come from countries such as the United Kingdom or the United States. Therefore, it is suggested to investigate the topic from a gastronomic point of view, to know the ketogenic offer of restaurants and how much of their ingredients are sourced from the food industry.
