Abstract: En el Perú, el aporte de la gastronomía peruana trasciende el aspecto económico e incide de manera gravitante en la revalorización de nuestra cultura. El efecto económico del boom de la gastronomía peruana tiene un impacto inmediato en las actividades de ese sector y en otros rubros productivos como el turismo.
El Centro Histórico de Ayacucho fuertemente caracterizado por su devenir histórico su gastronomía se ha convertido en un factor de reafirmación de identidad ayacuchana y de revaloración de sus comidas regionales convirtiéndose en un lugar de difusión gastronómica.
El proyecto busca recuperar la importancia de la tipología del mercado como espacio público y su integración en un contexto urbano establecido. El nuevo modelo de mercado fusiona el intercambio de productos, con la difusión de la gastronomía regional de Ayacucho para llegar a un sector turístico y a una cohesión social a través de la mezcla de varios conceptos. Es así que se enfoca en ofrecer espacios para una experiencia gastronómica diferente que se complementa con una serie de actividades culturales y educativas que lo enriquecen. Se propone un mercado gastronómico que se integre al entorno inmediato generando espacios de encuentro social que formen parte de la trama urbana de la ciudad, mediante la creación de plazas públicas, donde los usuarios se junten con el fin de disfrutar de la gastronomía y encuentros sociales.
In Peru, the contribution of cuisine transcends the economic aspect and influences considerably the revaluation of our culture. The economic effect of the Peruvian gastronomy boom has an immediate impact on the activities of that sector and other productive areas such as tourism. Ayacucho’s Historic Centre, which has been strongly modified by its historical memory or its gastronomy, has become a factor of consolidation identity and revaluation of its regional meals, becoming a place of gastronomic diffusion. This project seeks to recover the importance of market typology as a public space and its re-integration in an already established urban context. The new market model merges the trading of products, with the dissemination of the regional cuisine of Ayacucho, to include a tourism sector and social cohesion through the mixture of various concepts. Thus, it focuses on offering spaces for a different gastronomic experience that is complemented by a series of cultural and educational activities that enrich it. In this context, a gastronomic market is proposed, which can be integrated into the immediate social environment easily, generating social meeting spaces that are part of the urban grid of the city, through the creation of public squares, where users come together in order to enjoy gastronomy and social gatherings.
