This research work will result in the approach of a new market in the city of Huánuco under the concepts of a gastronomic market and with an emphasis on permeability. For this reason, the analysis of the factors that influence the development of this typology was performed. Currently, gastronomy is an important driver of economic growth in a region, since it generates tourism and jobs. Huánuco has great tourism, gastronomic and export potentials, but unfortunately they are not exploited, due to lack of organization and order. The markets of this city are in deterioration, being the Huanuco Model Market the most important, but the one that presents more deficiencies in its typology. To better understand the typology, the analysis of referential projects located in different parts of the world, mainly in Europe, was carried out since this typology is very characteristic in the continent, but also projects located in the country or countries that have similar conditions either climatic or demographic. On the other hand, the study of books on typology and emphasis (permeability) was also done. This research will allow us to understand the typology, its proper functioning and the proper design of a gastronomic market so that it contributes, complements and benefits the city.
