In this research yogurtwas fortified with vitamin A as palmitate, folic acid, ferrous sulfate stabilized with vitamin C and encapsulated micro and gluconate of zinc stabilized for the target school population, with the purpose of determining the effect in the concentration of the hemoglobin in experimental animals with induced anaemia, using for that objetive the method depletion-repletion of the hemoglobin. The depletion phase was induced to anaemia by means of the controlled supply of 15 g for day of the deficit purified diet (1.5 % of vitamin A and folic acid, 1.2 % of ferric sulfate), to males 15 rats of the race Holtzman of 27 to 28 days of life during 35 days. In the repletion phase, the anemic animals were randomly distributed into two groups, the first consisting of 5 animals received 20 g per day of standard purified diet used by the Bioterio of the National Agrarian University The Molina and the second made up of 10 animals which received 20 g per day purified diet deficient more fortified yogurt (0.212 mg of retinol, 0.095 mg of folic acid, 3.49 mg of iron and 3.92 mg of zinc; for 100 g of food), both groups for 28 days. It was obtain an average of 10.13 g / dL hemoglobin at the end of the induction period; with a significant increase in the concentration of hemoglobin in both groups (p = 0.000) on completion of the treatment (Hb average: 14.70 g / dL and 15.04 g / dL in the first and second group respectively), not significant difference was found in the hemoglobin between the groups (p = 0.164), demonstrating in this research anti anemic effect of the fortified product used in the race, based on the results of the concentration of hemoglobin.
