Sechium edule (chayote) is a plant that can be used as an alternative in the consumption of natural antioxidants to counteract the negative effects of free radicals. Objective: to quantify the total phenolic compounds and determine the antioxidant activity of the hydroalcoholic extract of Sechium edule (Jacq.) Sw. (Chayote). Materials and methods: the approach used was quantitative, with statistical methods, its methodological design was experimental, where the manipulation of variables is required. Result: For the hydroalcoholic extract, 500 grams of sample was weighed and macerated with 70% ethanol at a concentration of 10%, for 7 days at room temperature. The extract was filtered through Whatman filter paper for antioxidant tests. Regarding the antioxidant activity, it was evaluated for chayote extracts obtained in different solvents and different concentrations per mg, using the DPPH method. Conclusions: the comparative antioxidant capacity of the hydroalcoholic extract of Sechium edule (Jacq.) Sw. (Chayote) was determined by the DPPH method, obtaining results of 527.175 μM; 710.645 μM and 931.730 μM at concentrations of 100 ug/mL, 500 ug/mL and 1000 ug/mL respectively and the phytochemical screening found alkaloids, tannins, flavonoids, triterpenes and/or phytosterols.
