The green coconut water is sterile inside the fruit, however, microbiological contamination and biochemical changes can occur during extraction and filling, with loss of product quality and reduction of its commercial value. The objective of the present work was to study the preservation of green coconut water through the addition of PVPP, vitamin C as an antioxidant, storage temperature, microfiltration process and subsequent aseptic filling in PET bottles. Coconut water was extracted from green coconuts (Cocus nucifera), concentrations of 0.15% and 0.18% ascorbic acid were added, filtered through a membrane with pore diameters of 0.8 microns and 0.2 microns, and finally a drop of liquid nitrogen was added to each container. Packaging was carried out in a clean room in previously sterilized PET containers. The efficiency of the process was evaluated through microbiological, physicochemical and sensory characterization of the products obtained. The bottled coconut water was stored under refrigeration at 4°C for 90 days and at room temperature for a period of 90 days and analyzed every two weeks. The filtration process reduced the turbidity of the coconut water, but showed good sensory acceptability. The pH, total titratable acidity, °Brix and microbiological growth did not have a significant variation during the storage time in refrigeration. Coconut water stored at room temperature showed a significant change in the parameters analyzed greater than coconut water stored under refrigeration.
