Evaluation of the sanitary characteristics of the model market to restore good hygiene and sanitation practices in the Soritor district Food contamination occurs in different ways in the various processes of the production chain until it reaches the consumer, as a result of which diseases are increasing due to food safety and its production process, where the most affected are "children, pregnant women and the elderly" so it is essential to ensure food safety. In the Soritor model market there are a large number of people who attend daily and yet, despite the continuous presence of inspectors, bad sanitary practices have been evidenced, such as poor food handling (lack of hand washing, improper use of clothing by meat vendors, poor cleaning and disinfection of their stalls, bad odors and food in poor condition), which causes the presence of various vectors such as flies, rodents and cockroaches. The methodology used in the study was comprised of each objective in which for the first objective, "To identify the sanitary characteristics in the handling of food (fruits, vegetables and meats) in the Soritor model market", a survey was used; For the second objective, "To evaluate the initial sanitary status of the Soritor model market before developing environmental management strategies with a sanitary vision", an observation sheet was used and finally, for the third objective, "To determine the effect of the development of environmental management strategies with a sanitary vision to reestablish good hygiene and sanitation practices in the Soritor model market", a post-test was carried out through a second survey after the training sessions were held. In which it is concluded with the study that the characteristics in terms of sanitary knowledge are deficient and that after the development of environmental management strategies with sanitary vision, the level of traders in food handling became "good" with respect to the "regular" obtained at the beginning, likewise, the sanitary condition of the Soritor model market became "good" and "very good" in terms of the hygienic conditions observed, compared to the "deficient" initial condition. In response to the research hypothesis, it is concluded that the development of environmental management strategies with a sanitary vision influence or has significant effects on the sanitary characteristics in food handling and in the Soritor model market, which allows the reestablishment of good hygiene and sanitation practices.
