Malnutrition and anemia are major current problems, which condition various physiological processes; including at the brain level, in higher mental functions such as learning and spatial memory, even more so, during stages of growth and development. Coffee pulp is rich in nutrients and antioxidants, in addition to having a good safety and bioavailability profile in animals and humans. The present research aims to evaluate the comparative effect of the use of coffee pulp byproduct on learning, spatial memory and nutritional status in Rattus rattus var. albinus. A continuous stimulus design was developed where six similar groups of 10 rats each were arranged, grouped into control groups, malnourished group and problem group; with a 100% standard diet, a 75% substandard diet and with a supplement of coffee pulp respectively in rats between 8 and 12 weeks of age. In addition, the Morris water maze was used as an instrument to determine spatial learning and memory, as well as murinometric and hemoglobin values to determine nutritional status. It was found that longer periods of nutrition improve learning and spatial memory results, as well as nutritional values and hemoglobin, with the group fed with coffee pulp having the best results (p<0.005). It was concluded that the behavior of rats in the different phases of learning and spatial memory, as well as in nutritional states, improve with the use of coffee pulp as a dietary supplement.
