This research was carried out to determine the technical, economic, financial and social feasibility of implementing a low-calorie peach preserves (Prunus persica L.) processing plant for the city of Lima. There is a market (people from NSE A, B and C of Modern and Central Lima) that demand this type of product whose specific demand for the project is 358,8 tons equivalent to 437 671 cans of 820 grams of canned peach in the year 2021. In addition, there is technology capable of satisfying what the project demands since it can be acquired and imported from China with various types of capabilities. In total, 11 machines will be used for the production process with a capacity of 599 544 kg/year in an 8-hour shift per day or its equivalent of 731 151 cans/year. According to the economic and financial analysis, the project is feasible since S/ 2 223 782 have been invested with a bank debt of 40% of the total investment and a TEA of 15%. The result is that the Economic Net Present Value is S/ 698 507, the Economic Internal Rate of Return is 28,1% and the Recovery Period is 4,2 years, while the Net Financial Present Value is S/ 739 192 with a TIRF of 33,8% and a Recovery Period of 4 years. The project is socially viable because the area where the production plant will be located generates a positive impact, as demonstrated by the measurement of social indicators because for each sol of added value generated, only S/ 0,25 is invested; To generate a job, S/ 158 842 is invested and, finally, for every sol invested, S/ 3,93 of added value is generated.
