This research work was carried out in a company focused on the food sector, whose purpose is to market and distribute vegetables and fruits. The purpose of the research is to reduce the amount of waste generated in a distribution process by applying Lean Manufacturing tools. The implementation of these tools minimized the percentage of waste in the cutting and peeling processes, reduced the number of work tools in poor condition, and increased efficiency in the performance of operators by implementing a selection process for incoming raw materials. This positive impact was directly evident in the distribution of vegetables and fruits. The first chapter was based on investigating the sector to be developed globally and explaining the industrial engineering tools that were implemented in the project, which provided a solution to the aforementioned problem. In the second chapter, the problem was identified, the main and secondary causes were investigated, and finally the objectives to be carried out in the processing were proposed. In the third chapter, Lean Manufacturing tools were developed, such as autonomous maintenance, jidoka, standardized work. Finally, in chapter four, the results of the improvement proposal were evident. This work concludes that Lean Manufacturing tools reduced the central problem of this research, increasing productivity for the company in question, obtaining viable results.
