In this thesis, a diagnosis, analysis and development of an improvement proposal focused on the implementation of a production control and planning system in a food processing and commercialization company has been carried out. The development of the present study was born with the need to eliminate the constant rupture of stocks in the company, for which a diagnosis of the processes has been made to determine the root cause of the mentioned problem, using tools such as brainstorming, Ishikawa diagram and prioritization matrices. With this, having defined the problem, improvement proposals have been evaluated and the one that presented the greatest feasibility for its execution has been developed.The project consists of the development stage of the implementation of a production control and management system, development of formats for information management, standardization of recipes, calculation of wastage, and the technical and economic evaluation of the project to determine the feasibility for its execution.With this, it is determined that the project generates additional income in the first year of implementing the project, presenting an IRR of 45.22% and an NPV of S/ 61,145.05.Likewise, the implementation of the project will improve plant utilization by 22.70% and reduce shrinkage by 52.27%.
