Title: Caracterización y sustentabilidad de fincas productoras de vid para Pisco en Ica, Perú

Abstract: Este trabajo tuvo como objetivo general caracterizar, tipificar y evaluar la sustentabilidad de las fincas productoras de vid para Pisco en la provincia de Ica, Perú, y como objetivos específicos: i) Tipificar las fincas productoras de vid para Pisco; ii) Caracterizar las fincas productoras de vid para Pisco; iii) Calcular la huella de carbono y la huella hídrica en “fincas tipo” productoras de vid para Pisco y iv) Determinar la sustentabilidad de las fincas productoras de vid para Pisco. Para la tipificación y caracterización se trabajó con una encuesta estructurada en base a 10 componentes y con una muestra de 16 fincas ubicadas en la provincia de Ica que pertenecen a la Asociación de Productores de Piscos y vinos de Ica. El análisis clúster jerárquico determinó dos tipos de fincas y se caracterizó de acuerdo a los diez componentes. La evaluación de huella de carbono e hídrica se realizó en dos tipos de fincas como resultado de la tipificación de fincas. Se uso la metodología de la PAS2050:2011 para huella de carbono y la ISO14046:2014 para huella hídrica. La unidad funcional para los dos cálculos fue 1kg de uva pisquera. Para la huella hídrica se reporta los resultados como huella de escasez y huella de disponibilidad. Se encontró que el cálculo de huella de carbono para 1 kg de uva pisquera es de 0.15 y 0.05 kg CO2-eq para finca tipo 1 y tipo 2, respectivamente. Para la huella hídrica se encontró que la huella de escasez para 1 kg de uva pisquera era de 187 y 402 L de agua-eq para finca tipo 1 y 2 respectivamente. La huella de disponibilidad para 1 kg de uva pisquera era de 200 y 530 L de agua-eq para finca tipo 1 y 2 respectivamente. Se concluye que las mayores emisiones de gases de efecto invernadero ocurren en la fase de producción de Pisco y el mayor uso de agua tiene lugar en la fase agrícola, para los dos tipos de fincas en estudio. Para determinar la sustentabilidad, se consideró la metodología del “análisis multicriterio”, con modificaciones para adaptarlo al sector vitivinícola y para la zona de estudio. Se trabajó con una muestra de 16 fincas. Los indicadores fueron estandarizados en una escala de 0 a 4 y ponderados según el grado de influencia para la sustentabilidad ecológica, sociocultural y económica. Para considerar a una finca sustentable, el Índice de Sustentabilidad General debe ser mayor a 2. Se encontró que el 62.5 por ciento de las fincas estudiadas, tuvo un Índice de Sustentabilidad General > 2, es decir que no todas las fincas son sustentables, como se esperaba.

The objective of this work was to characterize, typify and evaluate the sustainability of the vine-producing farms for Pisco production in the province of Ica, Peru. The specific objectives were: i) Typification of the vineyard farms for Pisco; ii) Characterization of the vine-producing farms for Pisco; iii) Calculation of the carbon footprint and the water footprint in "vineyard-type farms" for Pisco and iv) Determine the sustainability of the vine-producing farms for Pisco. For the typification and characterization, a structured survey was carried out based on 10 components and with a sample of 16 farms located in the province of Ica that belong to the Association of Pisco and Wine Producers of Ica. The hierarchical cluster analysis determined two types of farms that were characterized according to the ten components. The carbon and water footprint assessment was carried out in two types of farms as a result of farms tipification. The methodology of PAS2050 was used: 2011 for carbon footprint and ISO14046: 2014 for water footprint. The functional unit for the two calculations was 1kg of Pisco grape. For the water footprint, the results are reported as scarcity footprint and availability footprint. The calculation of carbon footprint for 1 kg of Pisco grape was 0.15 and 0.05 kg CO2-eq for farm type 1 and type 2, respectively. For the water footprint, the scarcity footprint for 1 kg of pisco grape was 187 and 402 L of water-eq for farm type 1 and 2 respectively. The availability footprint for 1 kg of Pisco grape was 200 and 530 L of water-eq for farm type 1 and 2, respectively. It is concluded that the highest greenhouse gas emissions occur in the production phase of Pisco and the greatest use of water occurs in the agricultural phase for the two types of farms under study. To determine sustainability, the "multicriteria analysis" methodology was considered, with modifications to adapt it to the wine sector and to the study area. We worked with a sample of 16 farms. The indicators were standardized on a scale of 0 to 4 and weighted according to the degree of influence for ecological, sociocultural and economic sustainability. To consider a sustainable farm, the General Sustainability Index must be greater than 2. It was found that 62.5 percent of the farms studied had a General Sustainability Index greater than 2, that is, not all farms are sustainable as expected.
