The present research study had the aim of determining the physicochemical properties and the fatty acid composition of the oils from the seeds of two morphotypes of macambo "Theobroma bicolor (Humb. & Bompl)". The type of study was descriptive with analytical design. The samples of the morphotypes "small rough macambo, designated (morphotype 1) and smooth smooth macambo designated as (morphotype 2), were randomly extracted from the experimental fields of the National Institute of Agricultural Research (INIA) located at Km 25 of the Iquitos-Nauta highway. The results obtained from the percentage of oil of morphotype 1 is 25.31 % and of morphotype 2 is 42.67 %. The comparison of the physicochemical results of the oils from the seeds of the morphotype 1 and morphotype 2 "Theobroma bicolor (Humb. & Bompl)", are: similar, as it can be noticed: acid index is 0.69 and 0.96 mgKOH/g; saponification index 170.99 and 163.99 mgKOH/g; peroxide index 9.43 and 12.47 meqO2/Kg; iodine index 24.3 and 34.73 gI2/100g and unsaponifiable material 0.63 and 0.47 %. It was determined the composition of fatty acids by gas chromatography, being mainly the stearic acid 50.88% of the total fatty acids present in morphotype 1 and 51.68% in morphotype 2, it was also determined the presence of oleic acid with 37.56% for morphotype 1 and 36.48% for morphotype 2, besides other unsaturated fatty acids such as palmitoleic acid, linoleic acid and linolenic acid. It is concluded that the yield, physicochemical characteristics and fatty acid composition of the oil from the seeds of the two morphotypes of the "Theobroma bicolor (Humb. & Bompl)" have their own characteristics in each morphotype.
