Abstract: Hard yellow corn kernels have been widely consumed in the San Martin region since colonial times. In this context, it is necessary to characterize large quantities of seeds in a short time and with reliable methods. The objective of this work was to evaluate the nutritional quality parameters of imported (Zea mays) hard yellow corn (American and Argentinian) as well as the local varieties (Picota, Sisa and Bellavista), used for balanced feed by means of the calibrated NIRS method, in order to predict the nutritional content of the corn; evaluating grain and flour readings. Near infrared transmittance spectroscopy (NIRS) was used. A total of 120 maize accessions from the USA, Argentina and the San Martin region were used. Once the corn was cleaned, the samples were milled and NIRS readings were taken for the nutritional composition of the flours, such as moisture, crude protein with its respective amino acid content, ethereal extract, ash, nitrogen free extract, neutral detergent fiber, acid detergent fiber, gross energy and in vitro digestibility, respectively. The analyses showed that there is no significant difference between the content of nutrients and amino acids evaluated in the imported and domestic corn samples. Absorbance spectra were obtained in the wavelength range of 900 - 2500 nm. It is concluded that, with the high number of samples used in this study, the high predictive capacity for most of the established parameters and the robustness of the calibration equations obtained, the NIRS technique proves to be useful and fast to predict the nutritional composition of hard yellow corn used as an ingredient for the balanced feed by the company Don Pollo Tropical SAC. El grano de maíz amarillo duro es muy consumido en la región de San Martin desde épocas coloniales. En este contexto, es necesario caracterizar grandes cantidades de semillas en corto tiempo y con métodos confiables. El presente trabajo tuvo como objeto Evaluar los parámetros de calidad nutricional de (Zea mayz) maíz amarillo duro importado (americano y argentino) así mismo de los locales (Picota, Sisa y Bellavista), utilizado para alimento balanceado de aves mediante el método NIRS calibrado, con el fin de predecir el contenido nutricional del maíz; evaluando lecturas de grano y harina. Se utilizó la espectroscopía de transmitancia en el infrarrojo cercano (NIRS). Se emplearon 120 accesiones de maíz, provenientes de EE. UU, Argentina y de la región de Sn Martin. Una vez que se limpió el maíz, se molieron las muestras y se realizó la lectura NIRS de las harinas de su composición nutricional como humedad, proteína cruda con su respectivo contenido de aminoácidos, extracto etéreo, ceniza, extracto libre de nitrógeno, fibra detergente neutro, fibra detergente ácida, energía bruta y digestibilidad in vitro. respectivamente. Los análisis demostraron que no existe diferencia significativa en el contenido de nutrientes y aminoácidos evaluados en las muestras de maíz importado y nacional. Se obtuvieron los espectros de absorbancia en el rango de longitud de onda de 900 - 2500 nm. Se concluye que, con el elevado número de muestras usadas en este estudio, la alta capacidad predictiva para la mayoría de los parámetros establecidos y la robustez de las ecuaciones de calibración obtenidas, la técnica NIRS demuestra ser útil y rápida para predecir la composición nutricional del maíz amarillo duro utilizado como un ingrediente para el alimento balanceado por la empresa Don Pollo Tropical SAC.
