Title: Estudio del procesamiento de aleta de pota (Dosidicus gigas) cocida y coloreada con achiote

Abstract: El objetivo del presente trabajo fue determinar el flujo óptimo en la elaboración de aleta de pota (Dosidicus gigas) cocida y coloreada con achiote. El proceso consistió de las siguientes etapas: despellejado, lavado, cocido en solución acuosa con sal común, adicionado de achiote y en ebullición, lavado, cortado y envasado. Las variables estudiadas fueron: concentración de sal común y tamaño de las semillas de achiote en la solución de cocción, relación solución: aletas de pota (v/p), así como temperatura y tiempo de cocción. Las características evaluadas durante el proceso fueron: color mediante cartas de color; sabor y textura por evaluación sensorial por panel entrenado con escala estructurada y las calificaciones sometidas a un análisis de varianza; en el producto final se determinaron: composición química, rehidratación, análisis instrumental de textura (Brookfield) y pruebas sensoriales discriminativa triangular y de aceptabilidad. Los resultados mostraron que la relación solución: aletas de 2:1 (v/p) fue la más conveniente por facilitar la cocción y el uso de una solución al 3% de sal por la pigmentación de las aletas. Los tratamientos de temperatura y tiempo no influenciaron mayormente sobre el sabor y la textura de las aletas porque apenas se obtuvieron diferencias en los tratamientos A y B, no habiendo diferenciación significativa (p<0,01) en el resto de tratamientos; en cambio sí afectó en gran medida el color (significación p<0,01) en los diversos tratamientos. Las mejores características de color, sabor y textura de la aleta de pota determinadas en el estudio fueron superiores a las del producto comercial, especialmente la textura. La aleta de pota cocida y coloreada alcanzó una alta aceptabilidad y no se diferenció del manto de pota preparada en las mismas condiciones.

The aim of this study was to determine the optimal processing flow fin squid (Dosidicus gigas) cooked and colored with annatto. The process consisted of the following steps: skinned, washed, boiled in aqueous solution with salt, annatto added and boiling washing, slicing and packaging. The variables studied were: salt concentration and size of annatto seeds in the cooking solution, relationship solution: squid fins (v / p) and temperature and cooking time. The characteristics were evaluated during the process: color by color charts; taste and texture by sensory evaluation by panel trained with structured scale and qualifications subject to ANVA; in the final product they were determined: chemical composition, rehydration, instrumental analysis of texture (Brookfield) and triangular and acceptability discriminating sensory testing. The results showed that the relationship solution fins was 2: 1 (v / w) were the most convenient for cooking and facilitate the use of a 3% solution for improving pigmentation of the fins. The treatments (temperature/time) did not influence mainly on the taste and texture of the fins because hardly any differences in treatments A and B were shown, with no significant (p <0,01) in the other treatments; however it did affect greatly the color (significance p <0,01) in the various treatments. The best features of color, flavor and texture of the fin squid identified in the study were higher than those of commercial product, especially texture. Fin squid cooked and colored reached a high acceptability and did not differ pota mantle prepared under the same conditions.
