The investigation was carried out in the company Processes Alimentary San José dedicated mainly to the production and the commercialization of rosquitas cajamarquinas at national level, being its main clients Supermercados Peruanos, Cencosud and Vivanda. The company did not have a sanitary quality assurance system, which put at risk the safety of the processed products, so, our general objective was based on implementing a health quality assurance system, through Good Manufacturing Practices (BPM) and Standard Operating Procedures for Sanitation (POES). The research was conducted by collecting information through direct observation, compliance checklist and surveys to measure the level of training of employees. All this information was collected in the visits to the plant in each of its areas, making an initial situational diagnosis based on Supreme Decree No. 031-2010-SA and its amendment Supreme Decree 038- 2014-SA "Regulation of health monitoring and control of Food and Beverages "(2010). Ministry of Health and Supreme Decree No. 007-98-SA "Regulation on Surveillance and Sanitary Control of Food and Beverages", the general percentage of compliance being 69.34%. Subsequently, the design of the implementation was carried out in order to contribute to the assurance of quality and compliance percentage. Then, the implementation of Good Manufacturing Practices (GMP) and Operational Standard Sanitation Procedures (POES) were carried out, through manuals, compliance forms, personnel training, changes in infrastructure, responsible behavior and other compliance required by the Law. The results after the implementation were the expected ones since it was achieved that the sanitary quality assurance system generated a compliance of 85.18%, thus achieving a better performance of the company in terms of quality and productivity, providing products with greater safety. It is recommended that the company make constant updates, ie review and maintain the manuals, formats, records, training and instructions for quality assurance in accordance with the laws in force, in order to focus on the proper implementation and compliance of BPM and POES to subsequently achieve certifications in the HACCP and ISO system.
