This research was born as a need to ensure a successful HACCP program development by generating a process which allows its implementation, guaranteeing safe for human consumption and can be differentiated by the consumer for its quality. Food quality in our region and in our country is still not very considered among the industries involved, especially in companies in this category (decanters and distilleries) where information is almost zero. That is why the present research gives guidelines step by step to implementing a HACCP program in a plant producing alcoholic and spirits. The research addressed the standardization of the production process of Ron aged with Quewña a tree native to the mountains, generating good results that allowed the certification and standardization of the line, proved to be a very important tool in preventing risks during manufacturing beverage. Thus the present system was developed to replicate batch to batch, the organoleptic, sensory, physical and chemical characteristics of the product through the study and identification of the permissible critical limits throughout the process, generating results from the first batch produced HACCP and GMP's. In addition to using this implementation Idelsa Distilleries Company, which has national legislation, through the RM-449-2006 - DIGESA, requests for food quality assurance.
