Propuesta de un manual de buenas prácticas de manufactura (BPM) para una planta de tratamiento de agua de mesa

Abstract

El presente trabajo consistió en proponer la elaboración de un manual de BPM (Buenas Prácticas de Manufactura) de la planta de tratamiento de agua del Instituto de Desarrollo Agroindustrial (INDDA). El trabajo tuvo dos partes, la primera fue enfocada en realizar un diagnóstico enfocado en la limpieza y la desinfección de las instalaciones, personal, equipos, saneamiento, almacenamiento y transporte de la planta en la que se elabora el agua de mesa perteneciente al INDDA; además, de un monitoreo microbiológico de las superficies y ambientes. Este diagnóstico, con encuestas y visitas, se realizó por medio de un procedimiento ordenado y sistematizado para recolectar información confiable y para determinar el problema principal y las propuestas de solución. La segunda parte del trabajo consistió en determinar el problema y la propuesta de solución. A partir de ello, se planteó la - de un manual de BPM como propuesta de solución, documento hasta ahora no existente en la Institución, es por ello que en el check list de verificación que se aplicó obtuvo como resultado un total d 177 puntos, lo que equivaldría a un 65% lo que dio pie para que se elabore el manual. Se espera que con el manual BPM la planta de agua de mesa tenga una oportunidad de mejora en el control de sus operaciones, además, de evitar problemas de inocuidad en sus productos y posibles sanciones.

The present work consisted of proposing the development of the GMP (Good Manufacturing Practices) manual for the water treatment plant of the Agroindustrial Development Institute (INDDA). The work had two parts, the first was focused on carrying out a diagnosis focused on the cleaning and disinfection of the facilities, personnel, equipment, sanitation, storage and transportation of the plant in which the table water belonging to the INDDA is produced; In addition, microbiological monitoring of surfaces and environments. This diagnosis, with surveys and visits, was carried out through an orderly and systematized procedure to collect reliable information and to determine the main problem and proposed solutions. The second part of the work consisted of determining the problem and the proposed solution. Based on this, the development of a BPM manual was proposed as a proposed solution, a document that did not exist until now in the Institution, which is why the verification checklist that was applied obtained a total of 177 points. which would be equivalent to 65%, which gave rise to the preparation of the manual. It is expected that with the GMP manual the table water plant will have an opportunity to improve the control of its operations, in addition to avoiding safety problems in its products and possible sanctions.
