The present work consisted of proposing the development of the GMP (Good Manufacturing Practices) manual for the water treatment plant of the Agroindustrial Development Institute (INDDA). The work had two parts, the first was focused on carrying out a diagnosis focused on the cleaning and disinfection of the facilities, personnel, equipment, sanitation, storage and transportation of the plant in which the table water belonging to the INDDA is produced; In addition, microbiological monitoring of surfaces and environments. This diagnosis, with surveys and visits, was carried out through an orderly and systematized procedure to collect reliable information and to determine the main problem and proposed solutions. The second part of the work consisted of determining the problem and the proposed solution. Based on this, the development of a BPM manual was proposed as a proposed solution, a document that did not exist until now in the Institution, which is why the verification checklist that was applied obtained a total of 177 points. which would be equivalent to 65%, which gave rise to the preparation of the manual. It is expected that with the GMP manual the table water plant will have an opportunity to improve the control of its operations, in addition to avoiding safety problems in its products and possible sanctions.
