General objective: To determine the anti-rust capacity of three potato varieties (Solanum tuberosum) with and without shell: white, yellow and rosy. Materials and methods: Descriptive, observational, traverse and prospective study type. The three obtained potato varieties were coming from the central mountain of the country (Junín). The biological sample was the watery extract of the yellow, white and rosy potato with and without shell. The method of reduction of the radical free stable 2,2 difenil - 1 - picrilhidrazil (DPPH *) was used to the corresponding hidracina. Results: The anti-rust capacity of the white potato with shell was higher, since it inhibited in 46% the formation of free radicals, comparing with that of the yellow variety with shell (22%) and rosy with shell (15.9%). The three potato varieties with shell were able to inhibit in more percentage the formation of free radicals. Conclusions: The white potato with shell and the yellow potato without shell has a bigger anti-rust action in front of the generating system of free radicals.
