This research work addresses the challenges and succession strategies in the Manhattan restaurant located in the historic center of Lima. This family business has been promoting Peruvian cuisine for over 28 years. The internal and external factors affecting the business are analyzed, highlighting the need for an immediate succession plan and more efficient marketing and purchasing process management. Weaknesses in inventory management and the lack of an effective social media communication strategy are also identified. A management model is proposed to improve the execution of strategies and the restaurant's performance, focused on standardizing purchasing and inventory processes, leveraging the technological platform available to generate operational efficiencies, and suggesting marketing and sales strategies that promote the competitive advantages of the restaurant. A financial analysis has also been carried out to project demand and results for the next 3 years. The objective of these proposals is to facilitate the continuity, competitiveness and sustainability of the business in a changing and competitive gastronomic environment. The years of pandemic and political crisis in Peru have slowed economic growth in the country, despite this, our cuisine has been one of the fundamental axes to promote the reactivation of the economy.
