The present research work aimed to evaluate the effect of three additions of moringa flour (Moringa oleifera) (2.00, 2.50 and 3.00%) and stevia (Stevia rebaudiana) (0.05, 0.06 and 0.07%) on the physicochemical characteristics and general acceptability in a functional drink of aguaymanto (Physalis peruviana L.). The physicochemical characteristics evaluated in the samples were titratable acidity, soluble solids, luminosity (L *), chromaticity (a *), chromaticity (b *) and phenolic contents, as parametric variables. Overall acceptability was assessed using a 9-point hedonic scale. Levene's test demonstrated homogeneity of variance for the parametric variables. The analysis of variance determined that there was a significant effect of the addition of moringa flour and stevia on the titratable acidity and general acceptability in the functional drink of aguaymanto. Likewise, only the addition of moringa flour produced a significant effect on the color (L *, a * and b *) and phenolic compounds. Duncan's test determined that 2.5% of moringa flour and 0.07% of stevia in the functional drink allowed obtaining adequate values of titratable acidity, 0.35%; color, L * (27.61), a * (- 1.66) and b * (10.36); soluble solids (5.9 ° Brix), 14.63 mg AG / 100 mL in phenolic compounds; the highest score was obtained in general acceptability, 9 points, equivalent to “I like it very much”, in the functional drink of aguaymanto
