The effect of the UV-C irradiation dose and storage time at 1 °C on the physicochemical characteristics, yeasts and molds counts and general acceptance of blueberries. Blueberry fruits were harvested in the province of Viru – La Libertad, immediately moved to the Professional School of Food Engineering at the Antenor Orrego Private University. The fruits were selected, weighed and divided into three groups, placed in trays with “clamshells” ventilated lids, then irradiated at doses of 2 and 4 kJ/m2 , considering a control sample and stored at 1 °C for 30 days. Every 7 days the dependent variables were evaluated. The variance analysis showed significant effect of the irradiation dose and storage time on the weight loss, soluble solids, firmness, titratable acidity, color, total anthocyanins and yeast and mold counts. Duncan test determinated that the sample with 4 kJ/m2 had the lowest weight loss, soluble solids content and yeast and mold counts; likewise, the greatest firmness, titratable acidity, brightness and total anthocyanins at the end of the storage. The sample with 4 kJ/m2 had the lowest count of molds and yeasts at the end of storage. After applying the Friedman test, general acceptability showed no significant effect of the irradiation dose and storage time. The 4 kJ/m2 sample was the most accepted. Presenting an average range of 2.12 for the day 30 for storage.
