In the present research work, analysis tools were used to establish and apply improvement proposals in a canned flavored milk processing line at the company Laits SA from July to December of 2015. For this reason, previous evaluations were done through inspections, so that the reality of the company could be revealed about the process described above. Two specific weak points were found that affected directly the process, therefore, the final product. These two points were: "Poor quality assurance" and "Insufficient Process Control", for those reasons, it was proposed to make a HACCP Plan (Hazard Analysis and Critical Control Points) and a Statistical Process Control Manual for the Line of canned flavored milks. In the elaborated HACCP plan, it was obtained that the critical points to be controlled in the line of canned flavored milks were presented in the Packaging and Sterilization stages. Therefore, a rigorous control must be carried out: "Form a double seal" and "Sterilize the packaged product according to the parameters of heat treatment, time and temperature (118 °C x 17 min), rotation of cars to 10 Rpm and water level over 265 m3 /h. In the statistical analysis performed, it was evidenced that the process for the variable in study "weight", was not stable neither able to satisfy the specifications, so a statistical manual was elaborated in order to detect any deviation and take actions when events that affect the variable under study, occur.
